In the 12th century, Elisabeth de Champagne married Guillaume Gouet, Lord of Montmirail. A few hundred years later, in 1663, their descendant Henry recovered the abandoned vines, rebuilt the presses and bottled the first vintage of Gouet-Henry champagne.
